RAW VEGAN CHOCOLATE DONUTS

Raw vegan donuts? Yes please.
I'll keep this simple.

They are chewy, chocolatey and filled with things that won't make you squeal (in the bad way).




1 cup of oats
1 cup of medjool dates (depitted)
5 brazil nuts
2 tbsp of cacao powder
2 tbsp (less or more depending on how you feel) of water
1 chia egg (2 tbsp of water mixed with 2 tbsp of chia seeds, this makes a gel)

Icing:
1 1/2 tbsp of cacao powder
2 tbsp of maple syrup
1 tbsp of coconut oil
1 tbsp of coconut milk



Add your oats to the blender or food processor and ground into a flour, then add the remaining ingredients and process until well combined into a gooey mix. 
Pop the mix into silicone donut molds and place in the freezer overnight

To make the icing, mix all ingredients in a bowl, then dip the donut in. Place iced donuts in the freezer for 1 hour.

RIDE FOR JOSH

Do you ever wake up and feel like you're dreaming? That's me when I wake up next to the most beautiful man I have ever seen.


"Koi No Yokan" is a Japanese phrase that essentially means upon meeting someone, you know it's inevitable that you're going to fall in love. So it's not so much a "love at first sight" kind of thing, more so that you know it's going to happen, one way or another. 
That was Michael and I. 

We met when I had just turned sixteen, I was experiencing the world of underage nightclubbing and he was the insanely attractive DJ at the dingy "Clockwork Orange" themed nightclub. We spoke, hit it off then began seeing each other weekly. He would pick me up from school and we would eat ice cream and play computer games at his house. Our relationship didn't really blossom until around three years ago. We have been through it all, and I mean that. 
Our relationship is unlike anything I have ever seen before. If you know us personally, you'd see that too. 
After over two years of being in a relationship, every single afternoon when I get home from work, I run into his arms and we hold each other close. We can be our true selves and feel no shame for it. We are beyond comfortable with one another. We can cry in front of each other, we can make hilariously hideous noises, we can sing, we can dance, we never argue & we are still falling more and more in love with every second that passes.


Michael has been the person that has completely changed my life. From being the shy sixteen year old girl that never knew who she was, nor had ever really felt strongly about anything - to now, the strong woman that is passionate, loving and "alive", Michael (whether he knows it or not), helped me grow into who I am today. 
Without the array of sadness that came from our relationship initially & without the immense happiness that I now receive every second of my life - I wouldn't be here, I wouldn't be happy and I wouldn't have strength.
Michael helped me through some of the hardest moments of my life. Some experiences that no one will ever encounter, nor would I ever wish these experiences on anyone. These could have easily killed me, I remember not wanting to go on anymore because my heart ached so much. With the love that Michael showed me, he opened up something within me that made me want to survive and show courage and strength. I overcame the life experiences that have helped shape me, because of his support. 


When I look at him, I see what is good in the world. I see love, compassion, hope, passion and courage. I will never, ever understand why he has chose to spend his life with me, but I will never take that for granted. I feel like the luckiest person on this planet just to wake up next to him. 
Michael's heart exceeds any other heart that I have met. 

During the first week of March, he will be setting off on a journey that will help my family & himself. He will be riding his bicycle 1,000km from our home in Tecoma, to the Sydney Opera House. Michael is raising much needed funds for Joshua's ongoing medical costs. 
This is the most selfless act that someone could do, myself and my family are so thankful. Words cannot express how much he means to me and how incredible this kind act is.



Michael, you're the best thing to ever happen to me. 
I love you with all of my heart, thank you.
